Impress with a simple cranberry cake, bursting with fresh fruit and served with a luscious vanilla sauce for the perfect holiday treat.
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 3 tablespoons butter, melted
  • 2 eggs, beaten
  • 1 cup milk
  • 3 cups fresh cranberries
  • 0.5 cup butter
  • 0.5 cup heavy whipping cream
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking dish.
  • In a large bowl, mix flour, baking soda, and salt. In a separate large bowl, whisk together 1 cup of sugar and 3 tablespoons of melted butter, then add eggs and beat until smooth. Combine the flour mixture and milk into the egg mixture until well blended. Gently fold in the cranberries until just combined, then pour the batter into the prepared baking dish.
  • Bake in the preheated oven for around 30 minutes or until a toothpick inserted in the center comes out clean.
  • For the sauce: Combine sugar, butter, heavy cream, and vanilla extract in a saucepan. Heat over medium-low heat, stirring occasionally, until sugar is completely dissolved (about 10 minutes). Pour the warm sauce over the cake. Let the cake cool in the dish for 10 minutes before transferring it to a wire rack to cool completely.
