Delicious fig muffins made with fresh figs, oats, applesauce, and flaxseed for a wholesome treat anytime.
Ingredients:
  • 1.75 cups fresh figs
  • 3 eggs
  • 0.5 cup applesauce
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 0.25 cup flax seed meal
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1.25 cups old-fashioned oats
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 24 muffin cups with paper liners.
  • Puree half of the figs in a blender until smooth, then finely chop the rest with a sharp knife.
  • In a big bowl, use an electric mixer to beat eggs, applesauce, and sugars until frothy. Add blended and chopped figs, flaxseed meal, cinnamon, pumpkin pie spice, baking soda, and baking powder. Gradually mix in flour on low speed, then gently fold in oats. Fill the muffin cups with the batter.
  • Bake until the tops bounce back when gently pressed, about 20 to 25 minutes in the preheated oven.
