Fresh Fig Preserves with Rum

Delicious homemade fig preserves with a hint of rum, ideal for gifting or enjoying anytime.
Ingredients:
  • 2.25 pounds fresh figs
  • 0.5 cup rum
  • 2 tablespoons rum
  • 500g gelling sugar
Instructions:
  • Thoroughly wash the figs. Remove stems and slice each fig in half or quarters, adjusting based on size.
  • In a large pot over medium-high heat, combine figs and rum and bring to a gentle boil. Simmer for 20 minutes. Add sugar, increase heat to high, and boil for 6 minutes precisely.
  • Check 3 pint-sized jars for cracks and any rust on the rings, discarding any that are defective. Place them in simmering water until fig preserves are ready. Wash the new lids and rings with warm soapy water.
  • Take the fig preserves off the heat and evenly spoon them into the hot, sterilized jars, leaving a 1/4-inch space from the top. Gently run a clean knife or thin spatula along the insides of the jars to eliminate any air bubbles. Use a moist paper towel to wipe the rims clean. Seal the jars with lids and screw them on tightly. Place the jars upside down on a clean cloth and let them cool completely for 3 to 4 hours.
  • Place in a cool, dark, dry location.
