Fresh Mozzarella and Tomatoes

Chill out with this refreshing cheese and tomato salad - a perfect side dish!
Ingredients:
  • 4 medium tomatoes, cut into 1/4-inch slices
  • 1/4 cup olive or canola oil
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 3 tablespoons red wine vinegar
  • 1 tablespoon water
  • 1/8 teaspoon salt
  • 3 drops red pepper sauce
  • 2 large cloves garlic, finely chopped
  • 8 ounces fresh mozzarella cheese, sliced
  • Salad greens, if desired
Instructions:
  • In a glass or plastic dish, arrange the tomatoes. Mix all the remaining ingredients, excluding the cheese and salad greens, in a tightly sealed container, then pour over the tomatoes.
  • Refrigerate the mixture for at least 3 hours, turning the tomatoes occasionally to allow the flavors to meld. Serve by layering the tomatoes and cheese alternately on a bed of salad greens.
