Elevate homemade pasta with basil pesto, pinenuts, and parmesan for a flavorful dish that will impress everyone.
Ingredients:
  • 450g plain flour
  • 1.20 gm salt
  • 4 free range eggs
  • Shaved parmesan, to serve (or vegetarian hard cheese)
  • 250.00 ml basil leaves
  • 25g parmesan
  • 40g pine nut
  • 1 garlic clove, finely chopped
  • 60ml olive oil
Instructions:
  • On a clean work surface, sift flour and salt together. Create a well in the center of the flour mound and crack the eggs into it. Lightly whisk the eggs with a fork, gradually incorporating a little flour. Keep blending until a dough forms. Knead the dough firmly for 10 mins until smooth. Cover with plastic wrap and refrigerate for 1 hour before using.
  • Divide the dough into 4 equal portions, covering each with plastic wrap. Attach a pasta machine to the side of your work surface, adjusting the rollers to the widest setting. Shape one portion into a flat rectangle and lightly flatten with a rolling pin. Roll the dough through the machine, dusting with flour. Fold the shorter sides to meet in the center, forming a smaller rectangle. Feed through the machine 6 times, repeating the process.
  • Adjust the roller setting down by one notch. Pass the dough through the machine. Gradually decrease the setting and roll until you achieve the second-to-last setting and the pasta is approximately 1mm thick. Place the pasta sheet on a floured work surface. Sprinkle with flour and gently roll it up. Repeat with the rest of the dough.
  • Slice the pasta sheets with a large sharp knife to create 2cm-wide ribbons, then lightly dust them with flour.
  • Make a flavorful basil pesto by blending basil, parmesan, pine nuts, and garlic in a food processor until finely chopped. While blending, slowly drizzle in the oil until well combined.
  • Boil the pasta in a generous amount of salted water for 2-3 minutes until tender. Drain thoroughly, then toss back into the pot with the pesto. Mix well. Serve in bowls topped with shaved parmesan. Enjoy right away.
