Quick and tasty strawberry bread, perfect for summer enjoyment.
Ingredients:
  • 1.5 teaspoons white vinegar
  • 0.5 cup milk, or as needed
  • 1 (4 ounce) package cream cheese, softened
  • 0.5 cup butter, softened
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1.5 cups fresh strawberries, mashed
Instructions:
  • Preheat the oven to 350°F (175°C) and grease/flour a 9x5x3-inch loaf pan.
  • Measure out vinegar into a cup and top it up with milk to reach the 1/2 cup mark. Set aside for later use.
  • Combine sugar, cream cheese, and butter in a large bowl and blend using a pastry blender until smooth. Mix in eggs one at a time, followed by vanilla extract until well combined.
  • In a small bowl, mix flour, baking powder, baking soda, and salt until combined. Gradually add and fold the flour mixture into the egg mixture until dough forms. Gently mix in the milk-vinegar mixture without overmixing. Fold in mashed strawberries with their juices. Transfer the dough to the prepared pan.
  • Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
