Homemade pastry filled with apple and cinnamon, fried to perfection. Enjoy hot or cold!
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 0.5 cup shortening, chilled
  • 0.5 cup cold water
  • 2 apples - peeled, cored and diced
  • 0.25 cup white sugar, or to taste
  • 0.125 teaspoon ground cinnamon, or to taste
  • 1 quart oil for frying, or as needed
Instructions:
  • For the pastry dough: Combine flour and salt in a large bowl. Add shortening and blend using 2 knives or a pastry blender until mixture resembles coarse crumbs.
  • Slowly drizzle in cold water, 1 tablespoon at a time, while gently stirring with a fork until the flour mixture is just moistened. Stop adding water when you can press a handful of the pastry mixture together to form a ball. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  • Prepare the filling by placing apples in a saucepan. Drizzle sugar and cinnamon over the apples and mix well. Cook covered on low heat until soft, then mash with a fork to achieve a thick applesauce consistency. Let it cool before using.
  • Roll the dough on a lightly floured surface until it's 1/8-inch thick, then use a large cookie cutter to cut out eight 4-inch rounds.
  • Fill the center of each pastry round generously with 1 heaping tablespoon of applesauce. Moisten the edges with cold water, fold in half, and use a fork to press and seal the edge. Repeat the process with the rest of the pastry rounds and filling.
  • Preheat oil in a deep fryer or large saucepan to 375°F (190°C).
  • Gently drop the pies into the hot oil in batches and fry until beautifully golden brown, around 2 to 3 minutes per side. Let them rest on a paper towel-lined plate to soak up excess oil. Repeat the process with the rest of the pies.
