Easy banana fritters: simple, crispy, and versatile - perfect for brunch or a tasty treat!
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.75 cup white sugar
  • 1.5 teaspoons ground cinnamon
  • 2 cups oil for frying, or as needed
  • 1 tablespoon confectioners' sugar
Instructions:
  • In a bowl, mix flour, baking powder, and salt. In another bowl, mash bananas, sugar, vanilla extract, and cinnamon together. Combine the flour mixture with the banana mixture until a well-mixed batter forms.
  • Heat 2 inches of oil in a heavy pot over medium heat until hot.
  • In batches, spoon batter into hot oil and fry until lightly golden brown, about 2 to 3 minutes per side. Place banana balls on paper towel-lined plate to drain and cool slightly. Sprinkle with confectioners' sugar before serving.
