Fried cauliflower with tahini sauce

Spicy cauliflower side dish with a unique and delicious twist.
Ingredients:
  • 95g (1/3 cup) tahini (sesame paste)
  • 60ml (1/4 cup) water
  • 60ml (1/4 cup) fresh lemon juice
  • 20.00 ml chopped fresh continental parsley
  • 2 garlic cloves, crushed
  • Salt & freshly ground black pepper
  • 1.5L (6 cups) vegetable oil, to fry
  • 1.2kg (about 1 head) cauliflower, cut into medium florets
Instructions:
  • Prepare the tahini sauce by combining tahini, water, lemon juice, parsley, and garlic in a bowl. Mix until smooth, then season with salt and pepper. Cover and set aside until ready to serve.
  • Heat the oil in a saucepan over medium-high heat until a bread cube becomes light golden in 15 seconds.
  • Fry half of the cauliflower in hot oil until golden brown, about 5-8 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain. Repeat with the remaining cauliflower. Arrange the fried cauliflower on a serving plate and drizzle with tahini sauce before serving hot.
