Fried cauliflower with tarator

Embrace the art of mezze with this delicious grazing recipe.
Ingredients:
  • Vegetable oil, to deep-fry
  • 1 small cauliflower, cut into bite-sized florets
  • 90g (1/3 cup) tahini (see note)
  • 1 clove garlic, finely chopped
  • 1 lemon, juiced
  • 1 pinch ground cumin
Instructions:
  • In a deep-fryer or saucepan, fill one-third with oil and heat over medium heat to 160C (or until a cube of bread turns golden in 20 seconds). Fry cauliflower in 3 batches for 5 minutes until golden and tender. Drain on paper towel, then season with salt.
  • In a bowl, combine smooth tahini, garlic, lemon juice, ground cumin, 1 teaspoon salt, and 80ml (1/3 cup) cold water until creamy. Result should be 180ml (3/4 cup) of tarator.
  • Place the crispy cauliflower in a serving bowl and enjoy with a side of flavorful tarator for dipping.
