Crispy fried frog's legs, coated in salty cracker crumbs for a delicious twist.
Ingredients:
  • 24 frog legs, skin removed
  • 0.5 cup cornmeal
  • 1 (4 ounce) packet saltine crackers, crushed
  • 1 tablespoon ground black pepper
  • 2 teaspoons salt
  • 1 teaspoon minced onion
  • 2 eggs
  • 0.5 cup milk
  • 2 cups vegetable oil for frying
  • 1 cup peanut oil for frying
Instructions:
  • Wash frog legs and dry them gently. In a large resealable bag, mix flour, cornmeal, crushed saltine crackers, pepper, salt, and onion thoroughly. In a shallow bowl, whisk together eggs and milk.
  • In a large skillet over medium-high heat, heat vegetable oil and peanut oil until it reaches a depth of about 1/2 inch.
  • In batches, coat legs in the flavorful egg mixture, then press them into the crunchy cracker coating until fully covered. Place the breaded legs on a plate without stacking. Repeat with the rest of the legs.
  • Gently drop the breaded frog legs into the hot oil in batches and fry until crispy and golden brown, approximately 4 to 5 minutes on each side. Remove and place on a paper towel-lined plate to absorb excess oil. Repeat with the rest of the frog legs.
