Fried Potatoes with Bacon and Ramps

Delicious spring dish: pan-fried potatoes with ramps, bacon, and garlic.
Ingredients:
  • 5 large potatoes, peeled and sliced
  • 2 tablespoons bacon drippings
  • 6 ramps, thinly sliced
  • 5 slices cooked bacon, chopped
Instructions:
  • In a large pot, cover the potatoes with salted water and bring it to a boil. Then, let the potatoes simmer on medium-low heat until they start to soften, approximately 10 minutes. After that, drain the potatoes.
  • In a large skillet, heat bacon drippings over medium-high heat. Cook and stir potatoes until they turn golden brown, about 15 minutes. Add ramps and bacon, then season with salt and black pepper. Keep cooking, stirring occasionally, until ramps are soft, about 5 minutes.
