Crowd-pleasing fried sweet potatoes: Blanch, slice, and fry sweet potatoes in butter and brown sugar for an easy and delicious dish.
Ingredients:
  • 6 sweet potatoes, peeled
  • 0.5 cup butter, or more as needed
  • 2 cups packed light brown sugar
Instructions:
  • Bring a large pot of water to a boil, then add sweet potatoes and boil for 4 minutes. Remove from water and slice into 1/2-inch pieces.
  • In a large frying pan over medium heat, melt butter. Mix in brown sugar until dissolved, adding more butter if needed. Add sweet potatoes and fry until golden brown, tender, and turn occasionally. Serve while hot.
