Frosted cinnamon cake

Create a show-stopping layered cake that will leave a lasting impression!
Ingredients:
  • 175g butter, softened
  • 376.25 gm caster sugar
  • 20.00 ml finely grated orange rind
  • 3 eggs
  • 437.50 ml plain flour, sifted
  • 112.50 gm self-raising flour, sifted
  • 0.63 gm bicarbonate of soda, sifted
  • 5.00 gm ground cinnamon
  • 193.13 gm milk
  • 250g butter, softened
  • 450.00 gm icing sugar mixture
  • 2 tsp vanilla bean paste
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 19cm square cake pan that is 6cm deep, then line the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • With an electric mixer, cream together butter, sugar, and orange rind until fluffy. Add eggs one at a time, mixing until just combined. Fold in flours, bicarbonate of soda, cinnamon, and milk. Pour batter into the prepared pan and bake for 50 minutes or until a skewer comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
  • Prepare the frosting by whipping butter with an electric mixer until it turns light and fluffy. Mix in icing sugar and vanilla until well combined.
  • Using a serrated knife, cut the cake in half. Place the base on a plate and spread half of the frosting on top. Then, add the cake top and spread the rest of the frosting over the entire cake. Serve and enjoy!
