Raisin-studded molasses bars topped with rich coffee icing. Irresistible!
Ingredients:
  • 0.5 cup shortening
  • 1 egg, beaten
  • 0.5 cup molasses
  • 0.33300000429153 cup hot, brewed coffee
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 cup raisins
  • 0.25 cup butter
  • 2 cups confectioners' sugar
  • 2 tablespoons cold, brewed coffee
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9x13 inch pan by greasing and flouring it.
  • In a large bowl, combine the shortening and sugar until creamy. Add the egg, molasses, and hot coffee, and mix well. In a separate bowl, sift together the flour, baking powder, baking soda, and cinnamon, then fold into the molasses mixture until combined. Gently stir in the raisins. Press the mixture evenly into the prepared pan.
  • Bake in a preheated oven for around 25 minutes until firm. For the icing, mix butter, confectioners' sugar, and cold coffee until smooth. Frost warm bars and let them cool before cutting.
