Ginger-spiced frosting sandwiched between molasses cut-out cookies.
Ingredients:
  • 1 cup margarine
  • 1 egg
  • 0.5 cup molasses
  • 2.5 teaspoons baking soda
  • 3 tablespoons boiling water
  • 4.5 cups all-purpose flour
  • 1 tablespoon margarine
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon salt
  • 2.5 cups confectioners' sugar
Instructions:
  • Combine 1 cup margarine and sugar in a large bowl, cream until smooth. Add the egg and molasses, mix well. Dissolve baking soda in boiling water and stir into the mixture. Gradually add the flour to form a smooth dough. Chill the dough for at least 1 hour before using.
  • Preheat your oven to 350°F (175°C). Roll out the dough on a lightly floured surface to 1/8 inch thick. Using a 3-inch round cutter, cut out circles. For half of the cookies, cut out a smaller 1-inch circle in the center. It's easier to do this after placing the cookies on the sheets. Arrange cookies 1 inch apart on ungreased baking sheets.
  • Bake in the preheated oven for 7 to 10 minutes until edges turn golden. Let the cookies cool completely before assembling. Spread frosting on one cookie and top with another cookie with a hole in the center.
  • Prepare the frosting by whisking together 1 tablespoon of margarine and water. Stir in the ginger and salt. Slowly mix in the confectioners' sugar until you achieve the perfect consistency. Spread this delicious frosting between your cooled cookies.
