Frozen yoghurt lollipops

Delicious and nutritious lollipops.
Ingredients:
  • 260g (1 cup) Greek-style natural yoghurt
  • 28.60 gm honey
  • 2.20 gm vanilla essence
  • 80g fresh raspberries or thawed frozen raspberries
Instructions:
  • Prepare a chilled baking tray lined with non-stick baking paper. In a medium bowl, mix together yoghurt, honey, and vanilla.
  • Add the raspberries to a bowl and gently mash with a fork until they are nearly pureed.
  • Gently fold raspberries into the yoghurt mixture to create a marbled effect.
  • Dollop 2 tablespoons of the yoghurt mixture onto the tray and shape it into an 8cm circle. Repeat with the rest of the mixture to create a total of 6 circles. Insert a wooden ice-cream stick in the middle of each circle. Freeze for 2 hours or until solid.
