Indulge in a slice of delicious fruity tea cake for a cozy treat.
Ingredients:
  • 350g mixed dried fruit
  • 500.00 ml cold tea
  • 125g caster sugar
  • 125g unsalted butter
  • 225.00 gm self-raising flour
  • 2.50 gm mixed spice
  • 1 egg
Instructions:
  • Combine the mixed dried fruit with the cold tea in a bowl. Cover and let it soak overnight.
  • Preheat the oven to 170C and prepare a 25cm x 10cm loaf pan by greasing it.
  • After draining the dried fruit, discard the soaking liquid. Combine the dried fruit with sugar, butter, and 150ml water in a saucepan. Bring the mixture to a boil, then simmer on low heat for 20 minutes. Let it cool, then mix in flour, mixed spice, and the egg, stirring thoroughly until well combined.
  • Transfer the mixture into the greased loaf pan and bake for 90 minutes, or until a skewer inserted into the cake comes out clean. If the cake is browning too quickly on top, simply cover it with baking paper or foil.
  • Allow to cool for 20 minutes, then transfer to a wire rack to cool completely. Serve sliced with butter.
