No-bake Fruity Pebbles® cheesecake - fun, vibrant, and party-ready!
Ingredients:
  • 8 tablespoons unsalted butter
  • 1.5 cups marshmallows
  • 2 cups fruit-flavored breakfast cereal (such as Post® Fruity Pebbles®)
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups fruit-flavored breakfast cereal (such as Post® Fruity Pebbles®), divided
  • 0.5 cup hot water
  • 1 (.25 ounce) package unflavored gelatin
Instructions:
  • In a pot over gentle heat, melt the butter. Stir in marshmallows and melt for approximately 5 minutes. Combine cereal and mix thoroughly.
  • Gently pat the mixture into a 9-inch pie pan and chill in the refrigerator for 20 minutes.
  • Using an electric stand mixer, beat cream cheese until smooth. Gradually add powdered sugar and incorporate 1 cup cereal. In a separate bowl, combine hot water and gelatin, then add it to the cream cheese mixture. Mix until the texture is smooth and creamy.
  • Spread the mixture evenly over the crust and chill in the refrigerator for a minimum of 2 hours.
  • Crush the leftover cereal and scatter it over the cheesecake.
