Fudgy avocado brownies, guilt-free and indulgent, gluten and dairy-free.
Ingredients:
  • 200g dark chocolate, coarsely chopped
  • 2 avocados, chopped
  • 30g (1/4 cup) cacao powder
  • Pinch of salt
  • 75g (1/2 cup) almond meal
  • 240g (1 1/2 cups) coconut sugar
  • 200g walnuts, toasted, chopped
Instructions:
  • Preheat oven to 180C/160C fan forced. Line a square 20cm cake pan with baking paper, leaving an overhang on the sides for easy brownie removal.
  • Gently melt the chocolate in a heatproof bowl set over simmering water, making sure the bowl doesn't touch the water, and stir occasionally.
  • Combine avocado, eggs, cacao, and salt in a food processor and blend until smooth. Transfer the mixture to a bowl and gently mix in almond meal, sugar, and chocolate until well combined. Fold in the walnuts. Spread the batter into the pan and bake for 30 minutes, or until set. Allow to cool in the pan before slicing.
