Try our irresistible gluten-free pistachio bars for a guilt-free energy boost!
Ingredients:
  • 500g fresh dates, pitted, halved
  • 35g (1/3 cup) raw cacao powder
  • 60ml (1/4 cup) coconut oil
  • 40.00 ml LSA (linseed, sunflower & almond meal)
  • 31.50 gm fresh orange juice
  • 3 tsp finely grated orange rind
  • 75g (1/2 cup) dried cranberries
  • 80g pkt pistachios, toasted, chopped
  • Raw cacao powder, extra, to dust
Instructions:
  • Prepare the loaf pan by greasing and lining it with parchment paper, leaving some parchment paper hanging over the sides. Combine dates, cacao powder, coconut oil, LSA, orange juice, and orange rind in a food processor until smooth. Transfer the mixture to a large bowl and mix in the cranberries and pistachios.
  • Sprinkle more cacao powder onto the base of the prepared pan. Spoon in the date mixture and use a greased spatula to smooth it out. Chill in the fridge for at least 8 hours until firm. Remove from the pan and cut into squares using a hot, dry knife (the mixture will be sticky). Dust with more cacao powder before serving.
