Sautéed fresh herbs and garlic in olive oil with garbanzo beans, zucchini, mushrooms, and tomatoes. Versatile as main or side dish; optional: add raisins or pine nuts.
Ingredients:
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh basil
  • 1 clove garlic, crushed
  • ground black pepper to taste
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 large zucchini, halved and sliced
  • 0.5 cup sliced mushrooms
  • 1 tomato, chopped
Instructions:
  • In a large skillet over medium heat, infuse oil with the flavors of oregano, basil, garlic, and pepper. Introduce garbanzo beans and zucchini, ensuring they are well coated with the aromatic oil and herbs. Cover and cook for 10 minutes, stirring occasionally.
  • Add mushrooms and fresh cilantro to the pan, cook until tender, stirring occasionally. Top with chopped tomato, cover, and allow the tomatoes to steam briefly without becoming mushy. Serve hot.
