Easy and tasty way to sneak veggies into your kids' meals!
Ingredients:
  • 1/2 cup garden vegetable-flavored cream cheese
  • 4 flour tortillas (8 to 10 inches in diameter)
  • 1 cup lightly packed spinach leaves
  • 1 large tomato, thinly sliced
  • 3/4 cup shredded carrot
  • 8 slices (1 ounce each) Muenster or Monterey Jack cheese
  • 1 small yellow bell pepper, chopped (1/2 cup)
Instructions:
  • Spread a generous layer of creamy cream cheese atop each tortilla, ensuring full coverage. Layer on fresh spinach and ripe tomatoes, leaving a 1-inch border. Sprinkle with shredded carrots, followed by a generous helping of cheese. Finish with a colorful sprinkle of bell peppers on top.
  • Roll up the tortillas tightly, then serve immediately or wrap them securely with plastic wrap and refrigerate for up to 24 hours.
