Mushrooms: Nutrient-rich "vegetarian meat" loaded with B vitamins, delicious eaten both raw and cooked.
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 500g cup mushrooms, thinly sliced
  • 3 garlic cloves, finely chopped
  • 60ml (1/4 cup) dry sherry
  • 21.00 gm fresh lemon juice
  • Pinch of chilli flakes
  • 20.00 ml chopped fresh continental parsley
  • Salt, to season
Instructions:
  • 1. Heat a large frying pan over high heat, add oil, swirl to coat, then sauté mushrooms and garlic, stirring frequently, for 2 minutes.
  • Lower the heat to medium, then introduce the sherry, lemon juice, and chili into the mix. Season with salt and pepper, give it a good stir to blend the flavors. Allow the mixture to cook for 2 minutes, or until the mushrooms have softened.
  • Gently fold in the fresh parsley and portion into individual serving dishes. Enjoy your delicious meal!
