Garlic prawns and rocket on ciabatta

Whip up elegant garlic prawns for a quick and impressive appetizer.
Ingredients:
  • 2 garlic cloves, crushed
  • 450g green banana prawns, peeled, deveined
  • 18.20 gm olive oil
  • Salt & freshly ground black pepper
  • 4 x 3cm-thick slices ciabatta (Bazaar brand)
  • 1 bunch rocket, ends trimmed, washed, dried
Instructions:
  • Preheat your oven to 200°C. In a medium bowl, mix the prawns with oil and garlic. Season the mixture with salt and pepper, then leave it to marinate for 10 minutes to enhance the flavors.
  • Place the ciabatta slices on a baking tray and bake in a preheated oven until they turn golden brown, about 7-8 minutes.
  • Preheat a large non-stick frying pan over medium-high heat. Cook the prawns for 2-3 minutes until they change color, stirring occasionally. Place ciabatta slices on plates, top with rocket and garlic prawns, and serve hot.
