Garlic-Parmesan Mashed Potatoes

Indulgent Yukon gold potato side dish, perfect for holidays or any night of the week.
Ingredients:
  • 5 lb Yukon gold potatoes, peeled and cut into 1-inch pieces
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 bulb garlic, cloves peeled
  • 3/4 cup butter
  • 1 cup shredded Parmesan cheese (4 oz)
  • Chopped fresh chives, if desired
Instructions:
  • Place potatoes in a 6-quart saucepan and cover with water. Bring to a boil over high heat. Reduce to medium-low heat and cook for 15 to 20 minutes, stirring occasionally, until potatoes are very tender.
  • In a 2-quart saucepan, bring broth, garlic, butter, and salt to a boil over high heat. Simmer for 18 to 20 minutes until reduced by half. Remove from heat and mash the garlic in the broth using a potato masher.
  • After draining the potatoes, place them back in the pan. Pour the broth mixture over the potatoes and mash until fluffy, then mix in the cheese. Garnish with chives before serving.
