Garlic-Rosemary Mushrooms

Transform mushrooms into a gourmet meal: toss with pasta and Parmesan or fold into an omelet with Gruyere, fontina or Swiss cheese.
Ingredients:
  • 1 ounce bacon, chopped
  • 1.5 pounds mixed mushrooms, such as cremini, shiitake (stemmed) and portobello, cut into 1/4-inch slices
  • 2 cloves garlic, finely chopped
  • 1.5 teaspoons chopped fresh rosemary
  • 0.25 teaspoon salt
  • 1 pinch freshly ground pepper to taste
  • 0.25 cup dry white wine
Instructions:
  • In a large skillet over medium heat, sizzle bacon until slightly golden, around 4 minutes. Toss in mushrooms, garlic, rosemary, salt, and pepper. Stir occasionally until nearly dry, 8 to 10 minutes. Deglaze with wine and simmer until most of the liquid evaporates, 30 seconds to 1 minute.
