Whip up this quick and delicious summer meal for a delightful alfresco dining experience.
Ingredients:
  • 90g (1 cup) dried breadcrumbs
  • 24.00 gm sesame seeds
  • 2 eggs, lightly whisked
  • 20.00 ml chopped fresh coriander
  • 5.30 gm soy sauce
  • 1 small garlic clove, crushed
  • 75g (1/2 cup) plain flour
  • 500g chicken tenderloins
  • Peanut oil, to shallow-fry
  • 140g (4 cups) baby spinach leaves
  • 1 ripe mango, cheeks removed, peeled, cut into 2cm pieces
  • 65g (1/2 cup) Marinated Feta, crumbled
  • 1/2 small red onion, finely sliced
Instructions:
  • On a plate, mix breadcrumbs and sesame seeds. In a shallow bowl, combine egg, coriander, soy sauce, and garlic. Season flour on a plate with salt and pepper.
  • Coat chicken pieces in flour, then dip in egg mixture and breadcrumb mixture, pressing to coat evenly. Place on a large plate.
  • Pour enough oil into a large frying pan to reach 1cm up the side of the pan. Heat over medium heat. Cook half the chicken for 2-3 minutes per side until golden and cooked through. Place on a plate lined with paper towel. Repeat with the remaining chicken.
  • Mix the vibrant spinach, juicy mango, tangy feta, and crispy onion in a bowl. Enjoy alongside the succulent chicken.
