Delight in the vibrant flavors of fresh ruby red beets - a sweet and tangy nutritious side dish.
Ingredients:
  • 10 medium beets (2 1/2 pounds)
  • 2 tablespoons cornstarch
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/3 cups water
  • 1/2 cup white vinegar
Instructions:
  • Trim beet tops to leave about 1 inch attached. Wash beets thoroughly, keeping them whole with roots intact. Bring water, white vinegar (for color preservation), and optional salt to a boil in a 4-quart Dutch oven. Add beets, cover, and simmer for 40 to 50 minutes until tender. Drain, cool, peel, and slice the beets.
  • In a 3-quart saucepan, combine cornstarch, sugar, salt, and pepper. Slowly pour in water and vinegar while stirring. Cook, stirring constantly, until the mixture thickens and comes to a boil. Allow it to boil for 1 minute while stirring continuously.
  • Combine the vibrant beets into the mixture and heat until warmed through.
