Savory Bauernfruhstuck: Potatoes, eggs, green onion, bell peppers, parsley, and ham come together for a delicious German farmer's breakfast.
Ingredients:
  • 3 large potatoes, skinned and quartered lengthwise
  • 3 tablespoons bacon fat or extra virgin olive oil
  • 2 cups roughly chopped green and white onions (include the greens from the green onions)
  • 2 cups roughly chopped bell peppers
  • Salt to taste
  • 1-2 cups chopped ham
  • 1/4 cup chopped parsley
  • 4 eggs, whisked
Instructions:
  • Boil the potatoes in lightly salted water until just cooked, about 10-15 minutes (test for doneness). Drain and rinse with cold water to cool. Cut into 1-inch squares and set aside.
  • In a large skillet over medium-high heat, heat 2 tablespoons of bacon fat (or olive oil). Add the onions and chopped bell peppers. Increase the heat to high and sauté until the onions and bell peppers are nicely browned, stirring frequently for about 2-3 minutes.
  • Transfer the vegetables to one side of the pan. Introduce the potatoes and another tablespoon of bacon fat (or olive oil) to the pan. Sauté the potatoes for approximately 2 minutes, stirring often. Season with salt while cooking. Combine the ham with the potatoes and cook, stirring frequently until the ham is warmed through, for 1-2 minutes.
  • Combine vegetables, potato, and ham in a bowl, then mix in the parsley. Add eggs and stir until evenly distributed. Cook until eggs start to set, then remove from heat. Serve promptly and enjoy with a dollop of ketchup on top.
