Fluffy German-style pear pancake, baked to perfection in a cast-iron skillet for a delightful breakfast or brunch.
Ingredients:
  • 2 large firm pears, cored and cut into 1/8-inch-thick slices
  • 0.5 cup white sugar, divided
  • 2 tablespoons lemon juice
  • 1.5 teaspoons lemon zest
  • 0.25 cup butter, sliced
  • 6 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 0.5 teaspoon kosher salt
  • 1 cup all-purpose flour
  • 1 tablespoon confectioners' sugar, or to taste
Instructions:
  • Coat pear slices with a delightful mixture of 1/4 cup white sugar, tangy lemon juice, and fragrant lemon zest.
  • Place the butter in a 12-inch cast-iron skillet and place it in the center rack of the oven preheated to 400 degrees F (200 degrees C. Remove skillet from the oven once the butter has just melted, which should take about 3 to 5 minutes.
  • In a large bowl, vigorously beat eggs until frothy. Add milk, 1/4 cup white sugar, vanilla extract, and salt; mix until just combined. Gradually sift flour into the mixture and gently stir until batter is just mixed.
  • Combine pear slices with the rich, melted butter until evenly coated, then arrange them in a single layer. Gently pour the batter over the succulent pears.
  • Place the pancake in the preheated oven and bake until it is firmly set in the middle, the sides have puffed up, and the bottom is golden brown, which should take around 28 to 30 minutes. Sprinkle the top of the pancake with confectioners' sugar before serving.
