Ghost Cheesecake Brownies

Make spooky ghost cheesecake brownies for Halloween with Chef John's recipe.
Ingredients:
  • 3 ounces dark chocolate, chopped
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1.25 cups granulated sugar
  • 0.75 teaspoon kosher salt
  • 0.667 cup all-purpose flour
  • 1 large egg white
  • 0.25 teaspoon vanilla extract
Instructions:
  • Prepare your 8x8 baking dish by greasing it and lining it with parchment paper after gathering all the ingredients.
  • Add the chopped chocolate to a heatproof bowl. Melt the butter in a saucepan over medium heat and pour it over the chocolate. Allow it to sit for 5 minutes until the chocolate begins to melt. Stir thoroughly until the chocolate is fully melted.
  • In a bowl, whisk together eggs and sugar until fluffy and pale. Mix in vanilla extract and salt, beating on high speed for 1 minute.
  • Add the decadent chocolate-butter mixture and mix it in for 30 seconds until perfectly blended. Gently fold in the flour using a spatula until fully incorporated. Remember to save 2 teaspoons of the scrumptious brownie batter for later.
  • Pour the rest of the batter into the baking dish, making sure it's evenly spread. Use a spatula to create a smooth top.
  • In a bowl, mix together softened cream cheese, sugar, egg white, and vanilla extract until fully combined.
  • Place 9 tablespoons of cheesecake dollops evenly on the brownie batter. Use a spoon and a bamboo skewer to shape the dollops into ghost-inspired designs.
  • Pipe two eyes and a mouth onto each cheesecake ghost by transferring the reserved brownie batter into a small plastic bag, snipping off one corner. Then, preheat the oven to 350 degrees F (175 degrees C).
  • Bake the brownies in the center of the oven until the edges turn lightly golden brown and the center is just set, which should take about 35 to 40 minutes. Since these brownies are of the fudgy, chewy style, the toothpick test won't work well, so avoid relying on it for this recipe.
  • Cool the brownies fully in the pan before moving them to a plate and cutting them into squares.
