Ginger and honey baby carrots

Stunning and simple side dish recipe.
Ingredients:
  • 36.40 gm pure olive oil
  • 5cm piece ginger, grated
  • 750g small carrots, peeled, quartered lengthways
  • 21.00 gm soy sauce
  • 28.60 gm pure Australian honey
Instructions:
  • In a large frying pan over medium heat, heat oil. Cook ginger until fragrant, about 1 minute. Add carrots and cook until well-coated and just beginning to soften, about 3-4 minutes.
  • Combine soy sauce, honey, and 1/4 cup of water in the pan. Let it simmer for 2-3 mins until the carrots are tender.
