Try these scrumptious sticky ginger and honey pork cutlets with cauliflower fried rice for a quick and tasty weeknight dinner!
Ingredients:
  • 20.00 ml fresh ginger, finely grated
  • 57.20 gm honey
  • 60ml soy sauce
  • 4 x 230g pork cutlets
  • 36.40 gm peanut oil
  • 1 cauliflower, cut into florets
  • 400g pkt Fresh Australian stir-fry mix
  • 60g pea
  • Coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • In a large bowl, mix ginger, honey, and soy sauce. Set aside 2 tablespoons of the marinade. Add pork cutlets to the bowl, ensuring they are coated with the mixture. Let marinate for 1 hour.
  • In a large frying pan over medium heat, heat 1 tablespoon of oil. Cook pork for 4 minutes on each side or until cooked through. Transfer to a plate and cover to keep warm.
  • Chop cauliflower in a food processor until finely minced.
  • In a skillet, heat the remaining oil. Sauté cauliflower for 10 minutes or until tender, stirring occasionally. Add the Mixed Stir-fry packet, peas, and reserved marinade. Cook for an additional 2 minutes until the vegetables are tender. Serve the pork with cauliflower rice, coriander leaves, and lime wedges.
