Ginger sesame pork with mango salsa

Tropical mango lime chili paired with succulent ginger pork, perfect for summer.
Ingredients:
  • 2 tsp finely grated fresh ginger
  • 40.00 ml dry sherry
  • 4 (about 175g each) pork loin cutlets, French trimmed, excess fat trimmed
  • Mixed salad leaves, to serve
  • 4 small wholegrain bread rolls, to serve
  • 2 mangoes, cheeks removed, peeled, finely chopped
  • 4 shallots, trimmed, pale section only, thinly sliced
  • 1 long fresh red chilli, seeded, finely chopped
  • 40.00 ml chopped fresh coriander
  • 21.00 gm fresh lime juice
Instructions:
  • Combine sesame seeds and ginger in a mortar and pestle, pound until a coarse paste forms. Transfer to a shallow glass or ceramic dish, stir in sherry and sesame oil. Add pork, toss to coat. Cover with plastic wrap and refrigerate for 30 minutes to marinate.
  • Prepare the vibrant mango salsa by mixing fresh mango, shallot, chili, cilantro, and a splash of lime juice in a bowl.
  • Preheat a spacious non-stick pan over high heat. Sear the pork for 2 minutes on each side. Lower the heat to medium and continue cooking for another 2-3 minutes per side until just done. Place on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Plate the pork, generously covering it with flavorful mango salsa. Accompany it with a vibrant mix of salad leaves and soft bread rolls for a delightful meal.
