Ingredients:
  • 450g fresh Singapore noodles
  • 5cm piece fresh ginger, peeled, finely grated
  • 65.63 gm soy sauce
  • 4 (150g each) lean pork butterfly steaks
  • 2 tsp cracked black pepper
  • canola oil cooking spray
  • 6.00 gm sesame seeds
  • 1 bunch choy sum, trimmed, chopped
  • 76.25 gm oyster sauce
Instructions:
  • Place noodles in a heatproof bowl and cover them with boiling water. Allow them to sit for 2 to 3 minutes until tender. Drain the noodles and return them to the bowl.
  • In a jug, mix together minced garlic, grated ginger, and soy sauce. Place the pork on a plate and pour the garlic mixture over it, tossing well to coat. Finish by sprinkling with freshly ground black pepper.
  • Prepare a generously oiled large frying pan over medium-high heat. Cook the pork for 2 to 3 minutes on each side to your desired doneness. Set aside the marinade for later use.
  • Prepare the wok by spraying it with oil and heating it over medium-high heat. Add sesame seeds and cook for 1 minute until light brown. Then, stir in the reserved marinade and choy sum, cooking for 2 to 3 minutes until the choy sum is just wilted. Finally, add in the noodles, oyster sauce, and 2 tablespoons of cold water, cooking for another 2 to 3 minutes until heated through. Serve the pork with the noodles.
