Festive Christmas cupcakes bursting with ginger and spice flavors.
Ingredients:
  • 125g butter, softened
  • 110g brown sugar
  • 125ml golden syrup
  • 1 egg yolk (Coles Brand Australian Free Range)
  • 375g plain flour
  • 20.00 gm Brand Ground Ginger
  • 5.00 gm Brand Mixed Spice
  • Queen Royal Icing, to decorate
  • 200g butter, softened
  • 330g brown sugar
  • 90g golden syrup
  • 4 Free Range Eggs
  • 410g self-raising flour
  • 2.50 gm Brand Mixed Spice
  • 250ml milk
  • 250g butter, softened
  • 500g icing sugar mixture
  • 41.20 gm milk
  • 200g white chocolate, melted, cooled
  • Queen Red Food Colouring
Instructions:
  • Preheat your oven to 180C and line 24 muffin pans with 1/3-cup (80ml) capacity cases for the gingerbread cupcakes.
  • In a large bowl, use an electric mixer to whip together butter, sugar, and golden syrup until light and creamy. Add eggs one at a time, beating well after each addition. Slowly incorporate flour, ginger, mixed spice, and milk in alternating batches until just combined.
  • Distribute the mixture evenly into the pans. Bake for 20-25 minutes, or until a skewer comes out clean when inserted in the centers. Allow to cool completely on a wire rack.
  • Preheat your oven to 180C and prepare 2 baking trays lined with baking paper for the gingerbread men cookies.
  • In a bowl, cream together butter, sugar, and golden syrup using an electric mixer until pale and creamy. Mix in the egg yolk. Add flour, ginger, and mixed spice, then stir until combined. Knead the dough by hand until smooth, then cover with plastic wrap and chill in the fridge for 30 minutes.
  • On a dusted surface, flatten the dough to a 3mm-thick circle. Use a 7cm gingerbread man cutter to create shapes and transfer them to the lined tray. Bake for 10-12 minutes until lightly golden.
  • Prepare royal icing according to the instructions on the packet. Transfer the icing into a piping bag with a 2mm plain nozzle and use it to decorate each gingerbread man by piping eyes, a mouth, and buttons. For an optional touch, add a scarf using kitchen string or ribbon.
  • For the buttercream icing, whip the butter with an electric mixer until very light. Slowly add the icing sugar and milk in alternating batches, mixing until fully incorporated. Fold in the melted chocolate until smooth.
  • Prepare a piping bag by decorating the inside with 3-4 lines of food coloring. Fill the bag with icing and pipe onto the cupcakes. Garnish each cupcake with a gingerbread man and display them beautifully on a cupcake stand.
