Gingered Carrot and Cashew Dip

Seasonal Appetites blogger Beth Dooley's favorite: Easy carrot-ginger-cashew whirl for a refreshing twist.
Ingredients:
  • 2 large carrots, cut into 1-inch coins
  • 2 cloves garlic, peeled
  • 1-inch piece fresh ginger, peeled and chopped
  • 1/2 cup raw cashews
  • Salt and freshly ground black pepper to taste
Instructions:
  • Place the carrots, garlic cloves, and ginger in a medium saucepan, ensuring they are covered with water by 1/4-inch.
  • Bring the mixture to a vigorous boil, then lower the heat and gently simmer until the carrots are tender and most of the water has evaporated.
  • Combine the carrots, garlic, ginger, and 2 tablespoons of cooking water in a blender or food processor. Add the cashews and blend until creamy. Season with salt and pepper to your liking.
