Enhance carrot's natural sweetness with sugar and candied ginger in a quick and easy side dish.
Ingredients:
  • 6 medium carrots, sliced (3 cups)
  • 1/4 cup sugar
  • 2 tablespoons butter or margarine
  • 1 teaspoon finely chopped crystallized ginger
Instructions:
  • In a 3-quart saucepan, bring 1 inch of water to a boil (you can add salt for extra flavor). Add the carrots and bring to a boil again. Lower the heat, cover, and cook for about 5 minutes until the carrots are tender yet slightly crisp. Drain and enjoy!
  • In the same saucepan, caramelize sugar, butter, and ginger over medium heat until bubbly. Add carrots, then cook over low heat for 1 to 2 minutes until they are glazed and heated through, stirring occasionally.
