Ingredients:
  • 2 bunches baby (Dutch) carrots, trimmed, peeled
  • 15.90 gm lemon juice
  • 1.25 gm ground ginger
  • 40g butter, chopped
Instructions:
  • 1. Preheat your oven to 200°C/180°C fan-forced. 2. Spread carrots in a large roasting dish. 3. Mix lemon juice and ginger in a jug, then pour over carrots. 4. Add a drizzle of butter on top of the carrots. 5. Roast for 35 to 40 minutes until tender. 6. Serve and enjoy!
