Tangy lemon bars with a zesty candied ginger twist in a buttery shortbread crust.
Ingredients:
  • The Crust:
  • 1 1/2 sticks (3/4 cup) unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1/2 teaspoon freshly grated lemon zest
  • 1/2 cup minced crystallized ginger
  • 3/4 teaspoon ground ginger
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • The filling:
  • 3 large eggs
  • 1 1/3 cups granulated sugar
  • 6 Tbsp fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 3 Tbsp all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions:
  • Prepare the crust batter: Preheat the oven to 350°F. With an electric mixer, cream the butter until fluffy. Incorporate 1/3 cup of sifted powdered sugar and mix until light. Add lemon zest, ground ginger, crystallized ginger, and a pinch of salt, then beat well. Gradually add 1 1/2 cups of flour in 1/4 cup increments, mixing after each addition. Beat the crust batter until fully combined.
  • Spread the crust batter evenly in a 13x9-inch baking dish. Bake at 350°F for 12 to 15 minutes until lightly browned around the edges.
  • Prepare the lemon batter: In a medium bowl, combine eggs, granulated sugar, lemon juice, 1/2 tsp lemon zest, 3 Tbsp flour, baking powder, and 1/4 tsp salt. Whisk until thoroughly mixed while the crust is in the oven.
  • Spread lemon batter over crust, bake at 350°F for 15-20 minutes until golden. Optional: dust with powdered sugar. Cool in pan on rack, then slice into 36 pieces.
