Brussels sprouts roasted with balsamic glaze, garlic, and crispy bison bacon.
Ingredients:
  • 8 slices bison bacon
  • 2 pounds Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil, or as needed
  • 3 cloves garlic, minced
  • 0.5 cup balsamic vinegar
  • 0.125 teaspoon black pepper
Instructions:
  • Preheat oven to 425 degrees F. Crisp up the bison bacon in a large skillet over medium heat for 5 to 6 minutes, turning occasionally, until it's nice and crispy. Pat dry on paper towels, cool slightly, then chop into bite-size pieces and set aside.
  • Arrange Brussels sprouts in a single layer in a 15x10x1-inch baking pan. Drizzle with oil and bake for 20 to 25 minutes, stirring occasionally, until crisp-tender.
  • In a large skillet, melt butter over medium heat. Sauté garlic in the butter for 30 seconds. Stir in balsamic vinegar, salt, and pepper. Cook and stir for 5 to 7 minutes until the sauce thickens and reduces to about 1/4 cup. Toss in Brussels sprouts and coat them with the glaze.
  • Garnish Brussels sprouts with crispy bison bacon pieces before serving.
