Try these simple and delicious fruit and nut bars made with Betty Crocker® sugar cookie mix.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 2 to 3 teaspoons grated orange peel
  • 1/2 teaspoon vanilla
  • 1 egg, slightly beaten
  • 1 jar (12 oz) orange marmalade
  • 1 bag (5 oz) dried cherries (about 1 cup)
  • 1 cup sweetened dried cranberries
  • 3/4 cup cashew halves and pieces
  • 1/2 cup unblanched whole almonds
  • 1/2 cup chopped pitted dates
Instructions:
  • Preheat the oven to 350°F. Mix the cookie crust ingredients in a large bowl until fully combined. Press the dough into the bottom of an ungreased 13x9-inch pan. Bake for 14 to 16 minutes until it turns a golden brown color. Let it cool for 10 minutes.
  • In a 2-quart saucepan, heat the orange marmalade over medium-high heat until it comes to a boil, stirring constantly. Let it boil for 3 to 4 minutes, stirring frequently, until it slightly thickens. Then, mix in the rest of the filling ingredients until well combined. Spread the mixture evenly over the cookie crust.
  • Continue baking for an additional 15 minutes or until the edges turn a lovely golden brown and the filling is fully set. Allow to cool completely, approximately 30 minutes. Cut into bars by slicing into 8 rows lengthwise and 4 rows horizontally.
