Satisfy cravings with these irresistible glazed oven-baked doughnut bites.
Ingredients:
  • 340g (2 1/4 cups) plain flour
  • 185ml (3/4 cup) skim milk, warmed
  • 80g (1/3 cup) caster sugar
  • 7g (1 sachet) dried yeast
  • 1 egg, lightly whisked
  • 40g butter, melted
  • 1 jar Fruit and Chia Spread (Raspberry & Chia seeds)
  • 300g (2 cups) icing sugar
  • 70g (1/4 cup) Greek yoghurt,
  • Flaked almonds, toasted (optional), to serve
Instructions:
  • In a small bowl, mix together yeast, 60ml (1/4 cup) milk, and 2 tsp caster sugar. Cover with plastic wrap and let it sit for 10 minutes until frothy.
  • In a large bowl, combine flour, the rest of the sugar, and a pinch of salt. Create a well in the center. Add the yeast mixture, egg, butter, the rest of the milk, and the remaining caster sugar. Mix until everything is well combined.
  • Move the mixture onto a fresh work surface. Knead for 8 minutes until smooth. Place in a lightly greased bowl, cover, and let it double in size in a warm spot for about 1 hour.
  • Knead the dough for 2 minutes until smooth. Roll heaped spoonfuls of dough into balls and place on greased oven trays. Cover, set aside in a warm place, and let rise for 30 minutes.
  • Preheat the fan forced oven to 230 degrees. Bake the doughnuts for 10 minutes or until they turn golden brown. Then, transfer them to a cooling rack.
  • Combine the icing sugar, yogurt, and 2 tablespoons of jam in a bowl, and mix until smooth.
  • Poke a hole in the side of each doughnut using a chopstick. Transfer the remainder of the jam into a ziplock bag, cut a small hole in one corner, and fill the doughnuts with jam using the bag. Finish by drizzling the doughnuts with the icing sugar mixture.
  • If desired, skip the raspberry glaze and instead brush warm doughnuts with melted butter and sprinkle with cinnamon sugar.
