Glazed vanilla plums

Indulge in tangy low-fat plum dessert in syrup to complete your meal.
Ingredients:
  • 62.50 ml flaked almonds
  • 32.00 gm brown sugar
  • 6 blood plums, halved, stone removed (see note)
  • 2.20 gm vanilla extract
  • 125.00 ml low-fat vanilla yoghurt
Instructions:
  • Place a non-stick frying pan over medium heat. Toast almonds, stirring occasionally, for 2 to 3 minutes until they turn a light golden color. Remove from heat and set aside on a plate.
  • Lower the heat to low. Combine sugar and 1/4 cup of cold water in the frying pan. Stir and cook for 2 minutes until the sugar is dissolved. Simmer for 2 to 3 minutes until the sauce thickens to a syrupy consistency. Add plums and cook for 3 minutes, gently turning them to coat evenly until they are heated through and glazed. Finally, mix in the vanilla.
  • Ladle the juicy plums and their syrup into bowls. Scatter with crunchy almonds and pair with chilled or warm yogurt for a delightful treat.
