Indulge in buttery gluten-free Danish made with pancake mix for a rich, flavorful treat.
Ingredients:
  • 0.5 teaspoon almond extract
  • 0.25 cup raspberry jam
  • 2 cups gluten-free pancake mix
  • 0.25 cup butter, room temperature
  • 0.66666668653488 cup milk
  • 0.66666668653488 cup confectioners' sugar
  • 2 tablespoons milk, or more as needed
  • 0.25 teaspoon almond extract
Instructions:
  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • In a bowl, mix pancake mix, butter, and sugar until crumbly. Add 2/3 cup milk and 1/2 teaspoon almond extract; continue mixing until fully combined. Expect a sticky dough.
  • Scoop rounded tablespoons of dough onto a baking sheet, leaving 2 inches between each. Use the back of a teaspoon to gently press an indentation in the center of each dough ball and fill with a teaspoon of jam.
  • Bake in the preheated oven for 10-12 minutes until lightly browned. Let the pastries cool.
  • Mix the confectioners' sugar, 3 tablespoons of milk, vanilla extract, and 1/4 teaspoon almond extract until smooth. Drizzle the glaze over the Danish.
