Create gluten-free waffles using sorghum flour, tapioca starch, xanthan gum, and baking powder.
Ingredients:
  • 3 cups sorghum flour
  • 1 cup tapioca starch
  • 0.25 cup white sugar
  • 4 teaspoons baking powder
  • 2 teaspoons xanthan gum
  • 2 chicken eggs, separated
  • 2 duck eggs, separated
  • 3.5 cups unsweetened vanilla-flavored almond milk
  • 0.5 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • cooking spray
Instructions:
  • Preheat the waffle iron as directed by the manufacturer and lightly coat it with cooking spray.
  • In a large bowl, combine sorghum flour, tapioca starch, sugar, baking powder, xanthan gum, and salt.
  • Whisk chicken and duck egg whites in a large glass or metal mixing bowl until soft peaks form. The egg whites should form soft mounds when the whisk is lifted straight up.
  • In a large bowl, whisk egg yolks, almond milk, applesauce, and vanilla extract until smooth. Slowly incorporate the flour mixture while continuing to beat. Gently fold in the egg whites to complete the batter.
  • Ladle 2/3 cup of batter onto the hot waffle iron. Cook until beautifully golden.
