Gluten-Free Apple Pie

Irresistible homemade apple pie that's sure to please everyone's taste buds!
Ingredients:
  • 3/4 cup potato starch flour
  • 1/2 cup tapioca flour
  • 1/2 cup white rice flour
  • 1/4 cup garbanzo and fava flour
  • 1/4 cup sweet white sorghum flour
  • 1 tablespoon sugar
  • 3/4 cup canola oil
  • 1/4 cup water
  • 1/2 teaspoon cider vinegar
  • 2 teaspoons xanthan gum
  • 1 teaspoon guar gum
  • 1/3 cup chopped walnuts
  • 5 cups chopped peeled apples (5 medium)
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg, if desired
  • 2 tablespoons cornstarch
  • 2 tablespoons water
Instructions:
  • Preheat your oven to 350°F and generously coat a 9-inch glass pie plate with non-stick cooking spray. Combine all flours, 1 tablespoon of sugar, and 1/2 teaspoon of salt in a medium bowl, and set it aside for later use.
  • Combine egg, oil, 1/4 cup water, vinegar, xanthan gum, and guar gum in a food processor. Process for 2 minutes. Add the flour mixture and process for 1 minute until well mixed. Transfer 1 cup of dough to a medium bowl and mix in walnuts and 1/4 cup sugar. Set aside. Press the remaining dough (about 2 cups) into the bottom and up the sides of a pie plate.
  • In a 3-quart saucepan, combine apples, sugar, water, salt, cinnamon, and nutmeg. Bring to a boil over high heat, then simmer on medium-low for 10 minutes. Stir occasionally.
  • In a small bowl, create a smooth mixture with cornstarch and 2 tablespoons water. Stir into the apple mixture and cook until thickened, about 1 minute. Transfer the filling into the crust and sprinkle the walnut dough evenly on top.
  • Bake for 55-60 minutes until the crust turns a beautiful medium brown and the filling is bubbling. Allow it to cool for at least 1 hour before serving.
