Irresistible gluten-free apple cake with flax seed, drizzled with homemade caramel sauce for a decadent family treat.
Ingredients:
  • 1.5 cups vanilla yogurt
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3 cups gluten-free all purpose baking flour
  • 3 tablespoons ground flax seed
  • 1 teaspoon salt
  • 0.125 teaspoon ground cloves
  • 0.125 teaspoon ground nutmeg
  • 4 apples, shredded
  • 0.5 cup butter
  • 0.5 cup brown sugar
  • 2 teaspoons milk
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously grease a fluted tube pan like a Bundt®.
  • Mix yogurt, white sugar, 1 cup brown sugar, eggs, and vanilla extract in a bowl with an electric mixer until creamy.
  • In a separate bowl, whisk together flour, flax seed, cinnamon, salt, cloves, and nutmeg. Gently stir in the yogurt mixture until just combined, then fold in the apples. Transfer the batter to the prepared pan.
  • Bake in the preheated oven for 70 to 75 minutes or until a toothpick inserted in the center comes out clean. Invert the cake onto a serving plate.
  • Combine butter, 1/2 cup brown sugar, and milk in a saucepan over medium heat until sugar dissolves, about 2 to 3 minutes. Remove from heat and let the sauce thicken for about 10 minutes. Drizzle over the cake.
