Delicious gluten-free cheese crackers made with garbanzo bean flour, Cheddar-Monterey Jack cheese, and butter.
Ingredients:
  • 4.5 cups shredded Cheddar-Monterey Jack cheese blend
  • 1 cup butter, cut into small pieces
  • 1.5 cups garbanzo bean flour
  • 1 teaspoon smoked paprika, or more to taste
  • kosher salt to taste
Instructions:
  • Preheat oven to 375°F (190°C) for the perfect bake.
  • Combine the Cheddar-Monterey Jack cheese and butter in a bowl. Cover and allow to come to room temperature.
  • In a separate bowl, mix the flour and paprika.
  • Combine cheese and butter, then gradually incorporate the flour mixture until a dough forms. Roll out the dough on a work surface until 1/8-inch thick. Cut into desired shapes, sprinkle with salt, and place on a baking sheet.
  • Bake in the oven until crackers are perfectly crisp, about 15-18 minutes.
